- In a shallow bowl, soak catfish fillets in buttermilk for 10 minutes.
- In another bowl, combine cornmeal, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
- Preheat the air fryer to 400°F (about 5 minutes).
- Remove catfish from buttermilk, letting excess drip off, then dredge each fillet in the cornmeal mixture, pressing gently to adhere.
- Lightly spray the air fryer basket with cooking spray.
- Place the coated catfish fillets in the basket in a single layer, making sure they do not overlap.
- Cook at 400°F for 12 minutes, flipping halfway through for even cooking.
- Once done, remove fillets and let them rest for a couple of minutes before serving.
