Ingredients
  

Chicken
  • 450 g boneless, skinless chicken breasts
Coating
  • 240 ml cooked amaranth
  • 120 ml breadcrumbs (preferably whole wheat)
  • 60 ml grated Parmesan cheese
  • 1 cucchiaino garlic powder
  • 1 cucchiaino onion powder
  • 0.5 cucchiaino paprika
  • cucchiaino Salt and pepper to taste

  • 1 egg, beaten
  • 15 ml olive oil

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine cooked amaranth, breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  4. Dip each piece of chicken into the beaten egg, then coat with the amaranth mixture, pressing gently to adhere.
  5. Drizzle olive oil over the coated chicken pieces.
  6. Place the chicken in a single layer in the air fryer basket (you may need to cook in batches).
  7. Air fry for 10 minutes, then flip the chicken pieces and air fry for an additional 10 minutes, or until golden brown and cooked through.
  8. Remove from the air fryer and let rest for a few minutes before serving.
