Ingredients
  

Freekeh
  • 1 cup freekeh
  • 2 cups chicken broth
Chicken
  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 cucchiaino garlic powder
  • 1 cucchiaino paprika
  • 1 cucchiaino cumin
  • 1 cucchiaino Salt and pepper to taste
Vegetables
  • 1 cup chopped bell peppers (any color)
  • 0.5 cup chopped onion
  • 1 g Fresh parsley for garnish (optional)

Method
 

  1. Rinse the freekeh under cold water and drain. In a medium saucepan, combine freekeh and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until liquid is absorbed. Fluff with a fork when done.
  2. While the freekeh is cooking, season the chicken thighs with olive oil, garlic powder, paprika, cumin, salt, and pepper.
  3. Preheat the air fryer to 380°F (190°C).
  4. Place the seasoned chicken thighs in the air fryer basket in a single layer. Cook for 15 minutes, flipping halfway through. Check for doneness; the internal temperature should reach 165°F (74°C).
  5. In the last 5 minutes of the chicken cooking time, add the chopped bell peppers and onion to the air fryer basket.
  6. Once the chicken is cooked, let it rest for a few minutes, then slice it.
  7. Serve the sliced chicken over a bed of freekeh, topped with the roasted bell peppers and onion. Garnish with fresh parsley if desired.

Notes

For added flavor, marinate the chicken in the spices and olive oil for 30 minutes before cooking. This dish pairs well with a simple side salad.
