- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the chicken, pumpkin, olive oil, garlic powder, paprika, thyme, salt, and pepper. Mix well to coat evenly.
- Place the chicken and pumpkin mixture in the air fryer basket in a single layer.
- Cook for 12 minutes, shaking the basket halfway through.
- After 12 minutes, check for doneness. If the chicken is cooked through (internal temperature of 165°F) and the pumpkin is tender, remove from the air fryer. If not, cook for an additional 3-5 minutes.
- Serve hot.
