- In another bowl, whisk together the eggs and Dijon mustard.
- Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat thoroughly in the rye breadcrumb mixture.
- Lightly spray the air fryer basket with cooking spray. Place the coated chicken breasts in a single layer, ensuring they do not touch.
- Air fry for 12 minutes, then flip the chicken breasts and air fry for an additional 10-13 minutes, or until the internal temperature reaches 165°F.
- Remove from the air fryer and let rest for 5 minutes before serving.

Notes
