- Preheat the air fryer to 375°F (190°C).
- In a large bowl, combine olive oil, garlic powder, smoked paprika, thyme, salt, black pepper, and cayenne pepper. Mix well.
- Add the chicken thighs to the bowl and coat them evenly with the spice mixture.
- Place the seasoned chicken thighs in the air fryer basket in a single layer.
- Cook for 15 minutes, flipping the chicken halfway through.
- While the chicken is cooking, heat the cooked sorghum in a small pot over low heat until warm.
- After 15 minutes, check the chicken for doneness (internal temperature should reach 165°F). If not done, cook for an additional 5 minutes.
- Once cooked, remove the chicken from the air fryer and let it rest for a few minutes.
- Slice the chicken and serve it over the warmed sorghum. Garnish with fresh parsley.

Notes
Make sure to not overcrowd the air fryer basket to ensure even cooking. Cook in batches if necessary. Sorghum is a great alternative to rice or quinoa.
