- Rub the spice mixture evenly over both sides of the kangaroo steaks.
- Place the seasoned kangaroo steaks in the air fryer basket in a single layer, avoiding overlap.
- Cook for 8-10 minutes, flipping halfway through, until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove the steaks from the air fryer and let them rest for 5 minutes before slicing.
- Garnish with fresh herbs if desired and serve.
