Ingredients

Sago Mixture
  • 200 g sago pearls
  • 750 ml water for soaking
  • 250 ml coconut milk
  • 50 g sugar
  • 0.5 cucchiaino salt
  • 0.5 cucchiaino vanilla extract optional
  • 1 bustina cooking spray

Equipment

  • Air Fryer

Method

  1. Rinse the sago pearls under cold water until the water runs clear. Soak the pearls in 3 cups of water for 30 minutes, then drain.
  2. In a mixing bowl, combine the drained sago pearls, coconut milk, sugar, salt, and vanilla extract (if using). Mix until well combined.
  3. Preheat the air fryer to 350°F (175°C) for 5 minutes.
  4. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  5. Spoon the sago mixture into small, greased ramekins or silicone molds, filling each about 2/3 full.
  6. Place the ramekins in the air fryer basket in a single layer. Cook for 15 minutes at 350°F (175°C) or until the sago is translucent and set.
  7. Carefully remove the ramekins from the air fryer and let them cool for a few minutes before serving.
