- Peel the salsify roots carefully to remove the tough outer skin. Cut them into 1/2-inch thick sticks or rounds.
- In a large bowl, toss the cut salsify with olive oil, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
- Preheat the air fryer to 400°F for 5 minutes.
- Place the seasoned salsify in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.
- Cook for 15-20 minutes, shaking the basket halfway through for even cooking, until the salsify is tender and golden brown.
- Remove from the air fryer, let cool slightly, and serve warm.

Notes
