- Preheat the air fryer to 375°F (190°C).
- In a large bowl, combine the shiitake mushrooms, olive oil, garlic powder, salt, and black pepper. Toss until the mushrooms are evenly coated.
- If using, drizzle the soy sauce over the mushrooms and toss again.
- Place the mushrooms in a single layer in the air fryer basket.
- Cook for 10-12 minutes, shaking the basket halfway through for even cooking.
- Remove and serve immediately.
