  • 1 cup tapioca pearls
  • 4 cups water
  • 1/4 cup sugar adjust to taste
  • 1/2 cup coconut milk optional
  • 1 cucchiaino salt a pinch

Method
 

  1. Rinse the tapioca pearls in cold water to remove excess starch.
  2. In a pot, bring 4 cups of water to a boil. Add the rinsed tapioca pearls and a pinch of salt.
  3. Cook the tapioca pearls for about 10-12 minutes, stirring occasionally until they become translucent. Drain and rinse under cold water.
  4. In a bowl, mix the cooked tapioca with sugar and coconut milk (if using).
  5. Preheat the air fryer to 180°C (356°F).
  6. Place the tapioca mixture into a greased air fryer-safe dish or tray, spreading it evenly.
  7. Air fry for 10 minutes, shaking the dish halfway through for even cooking.
  8. Remove from the air fryer and let it cool slightly before serving.

Notes

For a crunchy texture, air fry the tapioca longer, checking every minute after the initial 10 minutes to prevent burning.
