Ingredients
  

Bread Batter
  • 227 g softened Challenge butter 2 sticks
  • 400 g white granulated sugar for batter
  • 2 large eggs beat in one at a time
  • 2 tsp vanilla extract adds flavor
  • 480 ml buttermilk provides moisture
  • 520 g all-purpose flour for structure
  • 2 tsp baking soda leavening agent
Cinnamon Sugar Topping
  • 133 g granulated sugar for topping
  • 2 tsp ground cinnamon for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease the loaf pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Mix in the buttermilk, flour, and baking soda until well combined.
  4. In a separate bowl, mix the cinnamon and sugar for the topping.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over it. Pour the remaining batter and top with the rest of the cinnamon-sugar mixture.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

This bread is delicious when served warm. You can also add nuts or raisins to the batter for extra texture and flavor.
