  • 1/2 g jicama, sliced into matchsticks
  • 1 g large sweet apple (such as Fuji), sliced into matchsticks
  • 1/2 cup mayonnaise
  • 1/4 cup pineapple juice
  • 1 cucchiaino white sugar
  • 1/2 cucchiaino hot sauce, or to taste
  • salt and freshly ground black pepper to taste
  • 1/4 bunch chopped fresh cilantro
  • 1/3 ounce toasted corn bits (such as CornNuts ®), crushed

Method
 

  1. In a large bowl, combine the sliced cabbage, jicama, and apple.
  2. In a separate medium bowl, whisk together the mayonnaise, pineapple juice, sugar, hot sauce, salt, and pepper until smooth and fluffy, for about 1 to 2 minutes.
  3. Pour the mayonnaise mixture over the cabbage mixture and toss to combine. Allow it to sit for 5 minutes.
  4. Mix in the chopped cilantro and toss the coleslaw again to incorporate the flavors.
