Ingredients
  

Chicken
  • 680 g boneless, skinless chicken thighs or breasts, cut into bite-size pieces Use either thighs or breasts based on preference
  • 15 ml olive oil or sesame oil Choose between olive oil for a milder taste or sesame oil for a nuttier flavor
  • 1 tsp salt Adjust to taste
  • 1 tsp pepper Adjust to taste
  • 1 tsp garlic powder For seasoning the chicken
Mango Glaze
  • 1 piece ripe mango, peeled and chopped Substitute with ¾ cup mango purée if preferred
  • 30 ml low-sodium soy sauce For the glaze
  • 15 ml honey or maple syrup Adds sweetness to the glaze
  • 15 ml rice vinegar or lime juice Adds a tangy flavor to the glaze
  • 2 cloves garlic, minced For the glaze
  • 0.5 tsp fresh grated ginger Adds a spicy warmth to the glaze
  • 0.5 tsp chili flakes Optional, adjust to taste for heat
  • 1 tsp cornstarch mixed with 2 tablespoons water For thickening the glaze

Method
 

  1. Heat oil in a skillet over medium heat. Add chicken pieces and season with salt, pepper, and garlic powder. Cook until chicken is browned and cooked through, about 7-10 minutes.
  2. In a mixing bowl, combine mango, soy sauce, honey, vinegar, garlic, ginger, and chili flakes. Pour the mango glaze over the cooked chicken, stirring to coat. Add cornstarch mixture and cook until the glaze thickens, about 2 minutes.
