Ingredients
  

Sauce
  • 240 g mayonnaise
  • 120 ml Thai sweet chili sauce
  • 1 tsp Sriracha or more to taste
  • 30 ml honey
Chicken
  • 680 g boneless skinless chicken tenderloins
  • 240 ml buttermilk
  • 1 tbsp Sriracha
Coating
  • 96 g all-purpose flour
  • 60 g cornstarch
  • 1 large egg room temperature
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.125 tsp cayenne pepper optional
  • 120 g panko breadcrumbs plain
Frying
  • as needed ml Canola oil for frying
  • to taste Parsley chopped, for garnish

Method
 

  1. In a bowl, mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey for the sauce.
  2. In another bowl, combine buttermilk, chicken, and Sriracha. Marinate for at least 30 minutes.
  3. In a third bowl, mix flour, cornstarch, garlic powder, salt, pepper, and cayenne.
  4. Coat marinated chicken in the flour mixture, dip in egg, then coat with panko breadcrumbs.
  5. Heat oil in a frying pan and fry the chicken until golden brown and cooked through.
  6. Serve chicken drizzled with the sauce and garnished with parsley.

Notes

For a less spicy version, reduce the amount of Sriracha in the sauce and marinade. Serve with a side of steamed vegetables or a fresh salad.
