Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy using an electric mixer.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough and roll them in granulated sugar to coat.
  7. Place the dough balls onto the prepared baking sheet about 2 inches apart.
  8. Flatten each dough ball slightly with the bottom of a glass or your palm.
  9. Bake for 10-12 minutes or until the edges are golden and the centers are set.
  10. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra cinnamon kick, sprinkle a little cinnamon sugar on top of each cookie before baking. Make sure the butter is softened but not melted for the perfect cookie texture.
