- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and brown sugar until light and fluffy using an electric mixer.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough and roll them in granulated sugar to coat.
- Place the dough balls onto the prepared baking sheet about 2 inches apart.
- Flatten each dough ball slightly with the bottom of a glass or your palm.
- Bake for 10-12 minutes or until the edges are golden and the centers are set.
- Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For an extra cinnamon kick, sprinkle a little cinnamon sugar on top of each cookie before baking. Make sure the butter is softened but not melted for the perfect cookie texture.
