  • 2 pieces large chicken breasts or thighs, boneless for easier cooking
  • 2 cups white beans cannellini or great northern
  • 4 cups chicken broth low sodium preferred
  • 1 g medium onion chopped finely
  • 3 cloves garlic minced
  • 1 g red bell pepper diced
  • 1 g jalapeño sliced, adjust for heat preference
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 4 ounces cream cheese softened for easier mixing
  • 0.5 cup heavy cream adds richness
  • 1 tablespoon lime juice freshly squeezed
  • 0.25 cup fresh cilantro chopped, for garnish
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, red bell pepper, and jalapeño. Sauté until softened.
  3. Add chicken breasts, Cajun seasoning, salt, and pepper. Cook until chicken is no longer pink.
  4. Stir in white beans and chicken broth. Bring to a simmer.
  5. Add cream cheese and heavy cream. Stir until fully incorporated.
  6. Simmer for 15-20 minutes, stirring occasionally.
  7. Add lime juice and chopped cilantro before serving.
