  • 240 g all-purpose flour
  • 200 g granulated sugar
  • 50 g unsweetened cocoa powder
  • 1 tbsp baking powder
  • 0.5 tsp salt
Wet Ingredients
  • 120 ml vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 240 ml milk
  • 150 g fresh or frozen cherries, pitted and chopped Ensure cherries are evenly chopped
  • 90 g chocolate chips Use your favorite type of chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: oil, eggs, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped cherries and chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
