Chicken and Gravy
  • 4 pieces boneless, skinless chicken breasts Season with salt and pepper
  • to taste Salt and pepper For seasoning
  • 2 tablespoons olive oil For browning the chicken
  • 4 cloves garlic, minced Adds depth of flavor
  • 480 ml chicken broth Forms the base of the gravy
  • 1 tablespoon Worcestershire sauce Enhances the gravy
  • 1 tablespoon fresh thyme, chopped Use 1 teaspoon if using dried thyme

Cheesy Mashed Potatoes
  • 900 g potatoes, peeled and quartered For the mash
  • 120 ml milk For creamy mash
  • 100 g shredded cheddar cheese Adds cheesy goodness
  • 60 ml sour cream For tang and creaminess
  • to taste Fresh parsley, chopped For garnish

Method
 

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and add the chicken. Cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  2. Add minced garlic to the skillet and sauté for 1 minute. Pour in chicken broth and Worcestershire sauce, scraping the bottom of the skillet. Add thyme and butter, and stir until combined. Return the chicken to the skillet and let simmer.
  3. Meanwhile, boil the quartered potatoes in a pot of salted water until tender, about 15 minutes. Drain and return to the pot. Add milk, cheddar cheese, and sour cream. Mash until creamy and smooth.
  4. Serve the chicken with garlic gravy over the cheesy mashed potatoes. Garnish with fresh parsley.

Notes

For a richer flavor, use chicken thighs instead of breasts. Add more cheese to the mashed potatoes for extra cheesiness.
