Ingredients
  

Chicken Marinade
  • 1.5 lb boneless skinless chicken thighs cut into strips; chicken breast works too
  • 2 tbsp olive oil for marinade
  • 2 tsp dried oregano for seasoning
  • 1 tsp garlic powder for seasoning
  • 1 tsp onion powder for seasoning
  • 1 tsp paprika for seasoning
  • 0.5 tsp ground cumin optional but adds gyro-style depth
  • 0.5 tsp salt plus more to taste
  • 0.25 tsp black pepper for seasoning
  • 1 tbsp lemon juice fresh is best
Tzatziki Sauce
  • 1 cup plain Greek yogurt full-fat or 2% for best texture
  • 1 g cucumber shredded and squeezed very dry
  • 2 cloves garlic minced
  • 1 tbsp lemon juice fresh
  • 0.25 tsp salt to taste
Bowl Toppings
  • 1 cup cherry tomatoes halved
  • 1 g cucumber diced
  • 1 g small red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 4 pieces pita breads warmed and cut into wedges (or use rice/quinoa)
  • 1 g fresh parsley or dill optional garnish

Method
 

  1. Make the chicken marinade: In a large bowl, whisk together olive oil, oregano, garlic powder, onion powder, paprika, cumin (if using), salt, pepper, and 1 tablespoon lemon juice.
  2. Marinate the chicken: Add chicken thigh strips to the bowl and toss until every piece is well coated. Let it marinate for at least 15 minutes at room temperature.
  3. Prep the tzatziki: Shred 1 cucumber on a box grater. Place the shredded cucumber in a clean towel or cheesecloth and squeeze firmly until very dry.
  4. Mix tzatziki: In a medium bowl, stir together Greek yogurt, the squeezed shredded cucumber, minced garlic, 1 tablespoon lemon juice, and salt. Taste and adjust salt or lemon.
  5. Prep bowl toppings while the pan heats: Halve cherry tomatoes, dice the second cucumber, and thinly slice red onion. Toss with a small pinch of salt.
  6. Cook the chicken: Heat a skillet or grill pan over medium-high heat. When hot, add chicken in a single layer and cook for 5 to 7 minutes, turning occasionally.
  7. Warm the pita: Warm pita breads briefly in a dry skillet or microwave.
  8. Assemble bowls: Add pita wedges to each bowl. Top with cooked chicken, tomato-cucumber-onion mix, tzatziki, feta, and fresh parsley or dill.
  9. Serve immediately while chicken is warm. Add extras like olives or roasted red peppers if desired.

Notes
