Kofta
  • 500 g ground chicken Use fresh or frozen ground chicken.
  • 1 medium onion, finely chopped Chop the onion finely for better texture.
  • 3 cloves garlic, minced Mince the garlic cloves finely.
  • 1/4 cup fresh parsley, finely chopped Adds freshness to the koftas.
  • 1 tsp ground cumin Adds an earthy flavor.
  • 1 tsp ground coriander Enhances the flavor with citrus notes.
  • 1 tsp salt Season to taste.
  • 1/2 tsp ground black pepper Adds a hint of heat.
Garlic Yogurt Sauce
  • 1 cup plain yogurt Use full-fat yogurt for a richer sauce.
  • 2 tbsp freshly squeezed lemon juice Adjust to taste.
  • 1 pinch salt Season the sauce lightly.
  • 2 tbsp olive oil For grilling the koftas.

Method
 

  1. In a large bowl, combine ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix well.
  2. Form the mixture into small oval-shaped koftas.
  3. Preheat the grill and brush it with olive oil.
  4. Grill the koftas for about 10-12 minutes, turning occasionally until cooked through.
  5. In a separate bowl, mix yogurt, lemon juice, and a pinch of salt to prepare the garlic yogurt sauce.
  6. Serve the grilled koftas with the garlic yogurt sauce on the side.
