Chicken Quesadilla Filling
  • 2 cups cooked chicken breast, shredded Pre-cooked and shredded for convenience
  • 1 cup shredded cheese (cheddar or mozzarella) Choose your preferred cheese
  • 125 ml ranch dressing Use your favorite brand of ranch dressing
  • 4 pieces medium flour tortillas Ensure tortillas are fresh for best results
  • 1 tablespoon olive oil For cooking the quesadillas
  • 60 g diced green onions Adds a fresh flavor
  • 60 g diced bell pepper Adds color and crunch
  • 1/4 tsp black pepper Season to taste

Method
 

  1. In a bowl, mix the shredded chicken, cheese, ranch dressing, green onions, bell pepper, and black pepper.
  2. Heat olive oil in a skillet over medium heat. Place a tortilla in the skillet, add the filling on one half, and fold the tortilla over. Cook until golden brown, then flip and cook the other side.
