  • 2 telera or bolillo rolls Use fresh rolls for the best texture
Chicken
  • 1 lb boneless skinless chicken breast or thighs Choose your preferred cut
  • 1 tbsp chipotle in adobo or marinade of choice Adjust to taste
  • 1 avocado, sliced Ripe avocado adds creaminess
  • 120 g refried beans Adds a hearty layer
  • 30 g shredded lettuce For a fresh crunch
  • 1 tomato, sliced Adds juiciness
  • 1/4 onion, thinly sliced For added flavor
  • 60 ml pickled jalapeños Adds a spicy kick
  • 60 g queso fresco or mozzarella Choose your preferred cheese
  • 2 tbsp mayonnaise or crema For a creamy touch
  • tsp Salt and pepper To taste
  • ml Olive oil For cooking the chicken

Method
 

  1. Slice the rolls in half and lightly toast them if desired.
  2. Season the chicken with salt and pepper, then cook in olive oil until fully done. Shred or slice the chicken.
  3. Mix the shredded chicken with chipotle in adobo or your chosen marinade.
  4. Spread refried beans on one half of each roll and mayonnaise or crema on the other half.
  5. Layer the chicken, avocado, lettuce, tomato, onion, pickled jalapeños, and cheese on the rolls.
  6. Close the sandwiches and serve immediately.
