  • 2 eggs Large eggs work best
  • 200 g sugar White granulated sugar
  • 120 g melted butter Unsalted is preferred
  • 240 ml eggnog Use your favorite brand
  • 2 tbsp rum flavor extract Can substitute with real rum
  • 1 tsp vanilla extract Pure vanilla extract for best flavor
Dry Ingredients
  • 280 g all-purpose flour Sifted for a lighter texture
  • 2 tbsp baking powder Ensure it's fresh for best rise
  • 0.5 tsp salt Balances the sweetness
  • 0.25 tsp nutmeg Freshly grated for more flavor

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, beat eggs and sugar until smooth and creamy.
  3. Stir in melted butter, eggnog, rum extract, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and nutmeg.
  5. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optionally, dust with powdered sugar or drizzle with glaze before serving.
