Banana Bread
  • 300 g overripe mashed bananas Ensure bananas are well mashed for smooth texture
  • 60 g melted vegan butter Use a good quality vegan butter

  • 240 ml unsweetened almond or oat milk Almond milk is preferred for a nutty flavor
  • 1 tsp vanilla extract Adds depth of flavor
  • 1.5 tsp baking powder Helps the bread rise
  • 1 tsp baking soda Aids in leavening

  • 0.25 tsp salt Balances sweetness
  • 180 g regular or gluten free all purpose flour Use gluten free if preferred
  • 100 g old fashioned rolled oats Adds a hearty texture
Cinnamon Swirl
  • 60 g melted vegan butter For making the cinnamon swirl
  • 67 g light brown sugar For a richer flavor, use dark brown sugar
  • 2 tbsp cinnamon Gives the swirl its signature flavor
Frosting
  • 90 g powdered sugar Adjust sweetness to taste
  • 30 g melted vegan butter Adds richness to the frosting
  • 60 g softened vegan cream cheese Ensure it's softened for easy mixing

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. Add baking powder, baking soda, cinnamon, salt, flour, and oats. Stir until combined.
  4. Pour half the batter into the loaf pan.
  5. Mix melted vegan butter, brown sugar, and cinnamon for the swirl. Spread half over the batter.
  6. Add the remaining batter and top with the rest of the cinnamon swirl mixture.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool the bread before frosting.
  9. For the frosting, mix powdered sugar, melted vegan butter, and softened cream cheese. Spread over the cooled bread.
  10. Serve and enjoy.
