Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix pumpkin, eggs, oil, water, sugar, honey, and vanilla until well combined.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and sprinkle pumpkin seeds or pepitas on top.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
