  • 1 package cheese tortellini about 20 oz
  • 1 lb Italian sausage mild or spicy
  • 3 cups broccoli florets fresh or frozen
  • 3 cloves garlic minced
  • 1 cup heavy cream use half-and-half for a lighter version
  • 1 cup parmesan cheese freshly grated
  • 1 tablespoon olive oil for sautéing
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp red pepper flakes optional, for heat

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it into crumbles, until browned and cooked through. Transfer to a plate and set aside.
  2. In the same skillet, reduce heat to medium. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese until fully melted. Season with salt, pepper, and optional red pepper flakes.
  4. Meanwhile, cook the tortellini in a large pot of salted boiling water according to the package instructions. Add broccoli florets during the last 2-3 minutes of cooking. Drain together.
  5. Add the cooked sausage, drained tortellini, and broccoli to the skillet with the sauce. Toss to coat everything well.
  6. Serve hot, garnished with extra parmesan and cracked black pepper.

Notes

For a vegetarian version, omit the sausage and add more broccoli or other vegetables. Adjust the seasonings to your liking.
