Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts Trimmed and seasoned with salt and pepper
Sauce
  • 1 tbsp olive oil For cooking the chicken
  • 3 cloves garlic Minced
  • 240 ml chicken broth Use low sodium if desired
  • 120 ml pepperoncini juice From the jar
  • 120 g sliced pepperoncini peppers About 10-12 peppers
  • 240 ml heavy cream For a creamy sauce
  • 50 g grated Parmesan cheese Adds richness to the sauce
  • 1 tsp Italian seasoning Adds flavor
  • 0.5 tsp red pepper flakes Optional, for added heat
  • 1 tbsp fresh parsley Chopped, for garnish

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add garlic and cook for 1 minute until fragrant.
  4. Add chicken broth, pepperoncini juice, and sliced pepperoncini peppers. Bring to a simmer.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Cook for 2-3 minutes until slightly thickened.
  6. Return the chicken to the skillet and coat with the sauce. Cook for another 2-3 minutes.
  7. Garnish with chopped parsley before serving.
