Ingredients
  

Chicken
  • 4 pieces boneless chicken breasts pounded to 1/2 inch thickness
Breading
  • 1 cup grated Parmesan cheese freshly grated recommended
  • 1 cup panko breadcrumbs or gluten-free breadcrumbs for gluten-free version
  • 1/2 cup all-purpose flour or gluten-free flour for gluten-free version
  • 2 large eggs beaten
Sauce
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko and Parmesan cheese.
  3. Season chicken breasts with salt and pepper. Dredge each piece in flour, dip in eggs, and coat with the breadcrumb mixture.
  4. Heat butter and olive oil in a frying pan over medium heat. Cook chicken until golden brown on both sides, about 4-5 minutes per side.
  5. Transfer chicken to a baking sheet and bake for 10 minutes or until cooked through.
  6. In the same pan, add minced garlic and cook for 1 minute. Stir in chicken broth, heavy cream, and lemon juice. Simmer until thickened.
  7. Serve chicken drizzled with garlic sauce and garnish with chopped parsley.
