Mashed Potatoes
  • 2 lbs potatoes (peeled and cubed) Yukon Gold or Russet preferred
  • 120 ml milk (for creaminess) Add more for extra creaminess
Glazed Carrots
  • 1 lbs carrots (sliced) Slice evenly for uniform cooking
  • 2 tbsp brown sugar (for glazing) Adjust sweetness to taste

Method
 

  1. Season the chicken breasts with herbs, salt, and pepper. Cook in a skillet over medium heat until cooked through.
  2. Boil the potatoes until tender. Drain and mash them with milk and butter.

  4. Serve the chicken with mashed potatoes and glazed carrots.
