Cranberry Glaze
  • 2 cloves garlic, minced adds depth of flavor to the glaze
  • 1 cup fresh or frozen cranberries fresh is preferred for best flavor
  • 125 ml orange juice freshly squeezed preferred
  • 60 ml honey or maple syrup choose based on desired sweetness
  • 0.5 tsp salt enhances the flavors of the glaze
  • 1 tsp fresh rosemary, chopped or ½ tsp dried
  • 1 tsp grated orange zest adds a citrusy aroma
  • 1 clove garlic, minced adds a mild garlic flavor

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, place the chicken breasts and season with salt, pepper, and olive oil.
  3. In a saucepan, combine cranberries, orange juice, honey or maple syrup, salt, rosemary, orange zest, and minced garlic. Cook over medium heat until cranberries burst and mixture thickens.
  4. Pour the cranberry glaze over the chicken and bake for 30 minutes or until the chicken is cooked through.
