Ingredients

Chicken
  • 1 lb boneless skinless chicken thighs or breasts, cut into bite-sized pieces
Rice
  • 2 cups cooked rice white, brown, or jasmine
Glaze
  • 60 ml honey adds sweetness to the glaze
  • 80 ml BBQ sauce your favorite variety
  • 1 tbsp soy sauce adds umami flavor
  • 2 cloves garlic minced for flavor
  • 1 tbsp oil vegetable or olive oil for cooking
  • Salt and pepper to taste, for seasoning
  • Green onions or sesame seeds for garnish, optional

Equipment

  • Skillet

Method

  1. Season the chicken with salt and pepper. Heat oil in a skillet over medium-high heat. Add the chicken pieces and cook until golden and cooked through, about 5–7 minutes. Remove and set aside.
  2. In the same skillet, add garlic and cook for 30 seconds until fragrant. Stir in honey, BBQ sauce, and soy sauce. Simmer for 2–3 minutes until bubbly and slightly thickened.
  3. Return the chicken to the skillet and toss to coat in the glaze. Let it simmer for another 2–3 minutes until sticky and fully coated.
  4. Spoon warm rice into bowls and top with the honey BBQ chicken. Garnish with green onions or sesame seeds if desired.
