Ingredients
  

Chicken and Filling
  • 2 g chicken breasts 220g or 7oz each, skinless and boneless
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 30 g unsalted butter
  • 200 g mushrooms sliced about 1/8" thick
  • 2 cloves garlic finely minced
  • 1/2 tsp thyme leaves
  • 2 cups fresh baby spinach
  • 80 g mozzarella cheese sliced, or any cheese that melts well
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper.
  3. In a skillet, melt butter over medium heat. Add mushrooms and cook for 5 minutes until softened.
  4. Add garlic and thyme to the mushrooms, cook for an additional 2 minutes.
  5. Stir in spinach and cook until wilted. Remove from heat and let cool slightly.
  6. Cut a pocket in each chicken breast and fill with the mushroom mixture and cheese. Secure with toothpicks if needed.
  7. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts until golden brown on each side.
  8. Transfer the skillet to the preheated oven and bake for 15 minutes or until chicken is cooked through.
