  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste
  • 1 tbsp olive oil
  • 1 cup BBQ sauce
  • 1/2 cup honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 3 cups chicken broth
  • 12 oz penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/4 cup Parmesan cheese, grated
  • 1 tbsp Chopped fresh parsley for garnish

Method
 

  1. In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet. Cook until browned and cooked through.
  2. Add BBQ sauce, honey, apple cider vinegar, Dijon mustard, garlic powder, and smoked paprika to the skillet. Stir to combine.
  3. Pour in the chicken broth and bring to a boil. Add the penne pasta, stir, and reduce heat to a simmer. Cook until the pasta is tender.
  4. Once the pasta is cooked, stir in the mozzarella and Parmesan cheese until melted. Garnish with fresh parsley before serving.
