  • 60 ml soy sauce Use low sodium if preferred.
  • 2 tbsp honey Adjust to taste for desired sweetness.
  • 1 tbsp rice vinegar Adds a tangy flavor.
  • 0.5 tsp crushed red pepper flakes Optional, for added heat.
  • 1 cup fresh pineapple chunks (or canned, drained) Fresh is preferred for best taste.
  • 1 small red bell pepper, diced Adds color and sweetness.
  • 1 small onion, chopped Adds depth of flavor.
  • 2 cloves garlic, minced Use fresh for best flavor.
  • to taste Salt and pepper Season to personal preference.

Method
 

  1. Cook the jasmine rice according to package instructions.
  2. In a skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned.
  3. Add onion, bell pepper, and garlic to the skillet. Cook until vegetables are tender.
  4. Stir in pineapple, soy sauce, honey, rice vinegar, and red pepper flakes. Cook for an additional 5 minutes.
  5. Serve the chicken mixture over rice and garnish with sliced green onions. Season with salt and pepper to taste.
