  • 680 g boneless, skinless chicken breasts cut into 1-inch cubes
  • 60 ml soy sauce use low-sodium for a healthier option
  • 30 ml honey adds a sweet balance to the marinade
  • 15 ml rice vinegar provides a tangy flavor
  • 15 ml sesame oil for a nutty aroma
  • 1 tsp grated fresh ginger adds a zesty kick
  • 2 cloves garlic minced for flavor
  • 0.5 tsp red pepper flakes optional, for heat
Salsa
  • 240 g fresh pineapple diced into small pieces
  • 15 ml lime juice freshly squeezed for best flavor
  • 4 g salt adjust to taste
  • 12 pieces small corn or flour tortillas warm before serving
  • 15 ml olive oil for cooking chicken
  • 120 g shredded cabbage or slaw mix adds crunch to the tacos
Optional Toppings

Method
 

  1. In a mixing bowl, combine soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes. Add chicken and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken until fully cooked, about 10-15 minutes.
  3. In a separate bowl, mix pineapple, lime juice, and salt to prepare the salsa.
  4. Warm tortillas and fill each with chicken, cabbage, and pineapple salsa. Add optional toppings as desired.
