Ingredients
  

Blondie Base
  • 120 g butter unsalted, melted
  • 67 g granulated sugar
  • 67 g brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 156 g all-purpose flour
  • 0.5 tsp baking powder
  • 0.125 tsp salt
  • 112 g frozen raspberries
  • 110 g white chocolate chips
Topping
  • 30 g Melted white chocolate, drizzled Optional

Method
 

  1. Prepare an 8×8 baking dish by lining it with parchment paper. Set aside.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. In a mixing bowl combine the melted butter with the granulated and brown sugar. Whisk together until completely combined, between 1 and 2 minutes.
  4. Add the egg and vanilla extract. Whisk again until combined.
  5. Fold the flour, baking powder, and salt into the butter/sugar mixture.
  6. Fold in the frozen raspberries until combined. Then add the white chocolate chips, folding all the ingredients once more until evenly distributed and no flour streaks remain.
  7. Transfer this thick batter to the prepared baking pan in an even layer. Top with extra raspberries and white chocolate chips, to ensure the pops of red will be shown throughout.
  8. Bake for 30-35 minutes or until a toothpick inserted comes clean.
  9. Remove and let cool for at least 15 minutes before removing them from the pan. Cut, drizzle with melted white chocolate if desired, and enjoy!
