Ingredients
  

Cookies
  • 1 box Red Velvet Cake Mix can be substituted for chocolate cake mix + 2 tbsp flavorless gel food color
  • 120 ml oil canola or vegetable
  • 2 pieces eggs
  • 80 g all-purpose flour
Frosting
  • 8 ounces cream cheese room temperature
  • 113 g butter room temperature
  • 420 g confectioner’s sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F and line 1-2 baking sheets with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine cake mix, oil, eggs, and flour. If using chocolate cake mix, add food coloring.
  3. Mix until just combined. Use a medium cookie scoop to portion the dough onto prepared baking sheets.
  4. Bake for 10-12 minutes. Cool on the baking sheet for several minutes before transferring to a wire rack.
  5. Ensure cookies are completely cooled before adding frosting.
  6. For the frosting, beat cream cheese and butter together until whipped.
  7. Slowly mix in confectioner’s sugar and vanilla. Increase speed and beat until light and fluffy.
  8. Spread or pipe frosting over the cooled cookies. Add sprinkles or nuts if desired.
  9. Store in the refrigerator and bring to room temperature before serving.
