Ingredients
  

Chicken Stroganoff
  • 454 g chicken breast, cut into bite-sized pieces
  • 30 ml olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 227 g mushrooms, sliced
  • 1 tsp paprika
  • 15 ml Dijon mustard
  • 240 ml chicken broth
  • 240 ml sour cream
  • to taste salt and pepper Season to your preference
  • as needed cooked egg noodles or rice For serving
  • as needed Fresh parsley, chopped For garnish

Method
 

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft.
  2. Add garlic and chicken, cooking until the chicken is browned. Stir in mushrooms and paprika.
  3. Pour in chicken broth and bring to a simmer. Cook for 10 minutes.
  4. Reduce heat and stir in sour cream and Dijon mustard. Cook until heated through. Season with salt and pepper.
  5. Serve over cooked egg noodles or rice and garnish with parsley.
