Ingredients
  

Potatoes
  • 2 pounds small potatoes Yukon Gold or baby red potatoes work best
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • chopped fresh parsley for garnish, optional
  • grated Parmesan cheese for extra crispiness, optional

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes. Cut them in half lengthwise.
  3. Score the cut side of each potato with shallow criss-cross lines using a knife.
  4. Mix the seasoning: In a small bowl, combine olive oil, minced garlic, dried thyme, salt, and pepper.
  5. Coat the potatoes: Brush or toss the potatoes in the oil mixture, making sure the scored sides are well coated.
  6. Arrange on a baking sheet: Place potatoes cut-side down on a parchment-lined sheet pan.
  7. Roast for 30–40 minutes, until golden and crispy on the outside and tender inside.
  8. (Optional) In the last 5 minutes, sprinkle with a little Parmesan cheese for extra flavor and crunch.
  9. Garnish with chopped parsley before serving warm.
