Ingredients
  

Filling
  • 240 g cooked shrimp, chopped
  • 240 g crab meat, drained
  • 1 each bell pepper, thinly sliced
  • 1 each onion, thinly sliced
  • 1 tsp fajita seasoning
  • 30 ml olive oil for sautéing
Wrap
  • 8 each large flour tortillas
  • 100 g shredded Monterey Jack cheese
  • 60 ml sour cream for dipping
  • to taste fresh cilantro, chopped for garnish

Method
 

  1. In a skillet, heat olive oil over medium heat. Add bell pepper and onion, sauté until soft.
  2. Add shrimp, crab meat, and fajita seasoning. Stir until heated through.
  3. Place a portion of the filling on each tortilla, sprinkle with cheese, and roll tightly.
  4. Heat the roll-ups in the skillet until the tortillas are golden and the cheese melts.
  5. Serve with sour cream and garnish with fresh cilantro.
