Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar until light and creamy.
  3. Mix in the vanilla extract, then fold in the chopped pecans.
  4. Add the flour gradually and mix until a soft dough forms. It will look crumbly at first — keep mixing until it comes together.
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  6. Bake for 10–12 minutes, or until the bottoms are lightly golden. The tops should stay pale — that’s what makes them “snowballs.”
  7. While the cookies are still warm, roll them gently in powdered sugar. Once cooled completely, roll them again for a snowy, sweet finish.
