Dressing
  • 60 ml mayonnaise
  • 30 ml rice vinegar
  • 15 ml Asian chile pepper sauce (such as sambal oelek)
  • 15 ml vegetable oil
  • 1 ml lemon, juiced from half a lemon
  • 1.5 cucchiaino Dijon mustard
  • 0.5 cucchiaino white sugar
  • 1 pizzico cayenne pepper, or to taste
  • salt to taste
Coleslaw
  • 454 g head cabbage, quartered and thinly sliced
  • 2 fresh peaches, pitted and chopped
  • 20 ml thinly sliced fresh chives, divided (Optional) Reserve 1 teaspoon for garnish

Method
 

  1. In a bowl, whisk together mayonnaise, rice vinegar, Asian chile sauce, vegetable oil, lemon juice, Dijon mustard, and sugar until smooth.
  2. Season the dressing with cayenne pepper and salt to taste.
  3. In a large bowl, combine the sliced cabbage, chopped peaches, and 3 teaspoons of chives. Gently toss to mix.
  4. Pour the prepared dressing over the coleslaw mixture and stir until everything is evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the flavors to meld and the cabbage to soften slightly.
  6. Before serving, adjust the seasoning if needed, give it a final mix, and sprinkle the remaining teaspoon of chives on top.
