- Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper. Set aside.
- In a medium bowl, add the cake mix and baking powder. Whisk to combine.
- Add in the eggs and vanilla extract. Mix together to combine. Add in the butter and mix well.
- Toss in white chocolate chips and stir by hand to combine.
- Use a medium cookie scoop (about 1½ tablespoon) to scoop out balls of the dough. Roll each one in your hand to form a ball before placing it onto your prepared cookie sheet.
- Bake for 8-10 minutes.
- Remove from the oven and, if desired, press a few additional white chocolate chips into the top of the cookies. Let them rest for a couple of minutes on the cookie sheet. Then transfer to a cooling rack to finish cooling.
