Sugar-Free No Bake Raspberry Cheesecake Bites

Ingredients
  

Cheesecake Mixture
  • 227 g cream cheese softened
  • 100 g Monk Fruit Allulose confectioners sweetener
  • 30 ml heavy cream
  • 1 tsp vanilla liquid stevia
  • 1 tsp salt pinch
  • 3 tsp raspberry extract
  • 1 ml natural red food coloring few drops
  • 60 ml coconut oil melted
Coating
  • 283 g sugar free chocolate chips melted

Method
 

  1. In a stand mixer blend the cream cheese and sugar free confectioners sweetener together until smooth.
  2. Add the cream, stevia, salt and raspberry extract, natural food coloring until combined well.
  3. Slowly add in the coconut oil and continue to blend on high until it’s incorporated.
  4. Scrape down the edges of the bowl to make sure it’s all mixed well.
  5. Using a 1-1/4 inch mini cookie scoop, scoop batter onto a parchment lined baking sheet. Makes 40 balls.
  6. Freeze these for 1 hour before coating with melted chocolate.
  7. Drop one cheesecake bite into melted chocolate at a time and place on parchment lined pan.
  8. Refrigerate for another hour. Must be kept refrigerated until ready to serve.
