  • 100 g sugar Granulated sugar for sweetness

  • 120 ml vegetable oil For a moist texture

  • 220 g flour All-purpose flour for structure
  • 1 tsp baking soda Leavening agent
  • 0.25 tsp salt Enhances flavors
  • 0.75 tsp ground cinnamon Adds warm spice flavor
  • 0.5 tsp ground nutmeg Aromatic spice for depth
  • 80 ml whole milk Moistens the batter
  • 240 g sweet potatoes (cooked and mashed) Main ingredient, adds sweetness and moisture

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix the sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Alternately add the dry ingredients and the milk to the sugar mixture, mixing until just combined.
  6. Fold in the mashed sweet potatoes until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
