  • 1.5 cucchiaino olive oil
  • 0.5 g small onion, diced
  • 2 g garlic cloves, minced
  • 1 cucchiaio tomato paste
  • 2 container chicken bone broth (8.25 ounce each)
  • 0.75 cucchiaino Tuscan seasoning
  • 1 g skinless, boneless chicken breast, cut into pieces
  • 1 g handful roughly chopped spinach
  • 2 cucchiaio sun-dried tomatoes
  • 0.5 cup high protein pasta
  • 2 cucchiaio finely grated Parmesan cheese
  • 0.25 cup heavy cream

Method
 

  1. In a saucepan over medium heat, add olive oil. Once hot, sauté diced onion until translucent, about 5 minutes.
  2. Add minced garlic and sauté until fragrant, approximately 1 minute.
  3. Pour in the chicken bone broth and stir in the Tuscan seasoning, chicken pieces, sun-dried tomatoes, and torn spinach. Mix well.
  4. Add the high protein pasta and simmer until pasta is tender but still slightly firm, around 10 minutes.
  5. Sprinkle in the finely grated Parmesan cheese, stirring to combine.
  6. Stir in the heavy cream and allow the soup to heat through.
  7. Serve the Tuscan chicken soup immediately and enjoy its comforting flavors.
