- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix the dry ingredients: vanilla pudding mix, flour, baking powder, pumpkin spice, and baking soda.
- In another bowl, whisk together the pumpkin puree, oil, eggs, and sugar.
- Combine the wet and dry ingredients, stirring until just mixed.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
