Method
 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix the dry ingredients: vanilla pudding mix, flour, baking powder, pumpkin spice, and baking soda.
  3. In another bowl, whisk together the pumpkin puree, oil, eggs, and sugar.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
