  • 1 medium zucchini grated
  • 1 large carrot grated
  • 1 small onion finely diced
  • 1 cup shredded cheese cheddar or mozzarella
  • 4 large eggs
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Grate zucchini and carrot, then squeeze out extra water.
  3. In a skillet, heat olive oil and sauté onion for 3 minutes. Add veggies and cook 2 minutes more.
  4. Whisk eggs, milk, salt, and pepper in a bowl. Add cheese, parsley, and cooked veggies.
  5. Pour into the dish and bake 35–40 minutes until golden.
  6. Cool for 5 minutes before slicing. Serve warm or cold.
